WILMINGTON, N.C. (WECT) – On this edition of Backyard BBQ, WECT’s Bill Murray and Jon Barber with Wilmington Grill work on making ‘swineapple’ on the grill.

Swineapple is pork cooked inside a pineapple on the grill: an easy crowd-pleasing way to serve pork infused with that pineapple flavor.

All you have to do is take each pineapple, remove the core and place pork tenderloin inside with some chili lime or a cajun seasoning. Make about one pineapple for every one to two people.

Then add a couple toothpicks to the top to let you hold the top while it cooks and you can place it on the grill on medium heat, or about 375-400 degrees. Then you let it cook for about an hour; if you’d like to make it at a lower temperature, you can let it go for three or four hours.

Make sure to use your thermometer to make sure the pork is fully cooked through before you stop cooking.

You can also use some of the pineapple to make a grilled pineapple side with a chili lime seasoning.

Here’s the full recipe:

  1. Take a ripe pineapple, cut the top off and hallow out the inside.
  2. Take a seasoned pork tenderloin (seasoning of your choice), cut it to fit inside the pineapple and then cut that portion in half.
  3. Stuff pork tenderloin halves inside the pineapple.  Put the top of the pineapple back on with toothpicks.  Trim the top leaves of the pineapple so it can be placed on grill.
  4. Set grill temperature to medium / low and place stuffed pineapples upright on grill.
  5. Cook 2-3 hours until desired temperature and doneness of the pork.
  6. Enjoy!
