WILMINGTON, N.C. (WECT) -WECT’s Bill Murray is joined by Jon Barber with Wilmington Grill for this week’s Backyard BBQ recipe: lemon chicken.

Ingredients:
- Roaster chickens
- 1-2 lemons per chicken
- ½ white onion per chicken
- Olive oil
- Salt and pepper.
Instructions:
- Safely clean roaster chickens and pat them dry.Â
- Once dry, stuff 1-2 lemons and a half onion per chicken on the inside cavity of the bird.Â
- Lightly coat the outside of the bird with olive oil, and season with salt and pepper.Â
- Add chickens to the grill, breast side up. Cook at 425 degrees untilthe internal temperature of the thickest part of the chicken reaches 180 degrees.Â
- Remove chicken from the grill, and let rest for a few minutes.
- Once rested, carve up chickens and serve.
